OK, I just got done making salsa for the old Cinco de Mayo celebration at the Swiper household. Grilling out fajitas tonight, so figured homemade salsa was the way to go.
I was curious to if anyone else has recipes on this that they have made that were good. Mine isn't too bad. Can have a bit of a kick, but all in all is pretty good.
Here was what I did:
4 Roma tomatoes
1 can diced tomato
1 diced up onion
2 serrano peppers
cilantro (about 1/4 or 1/3 of the bundle roughly)
1 T salt
2 cloves garlic
1/2 teaspoon lemon jiuce
All in a bowl, then chopped it all up with one of those gadget type things. Turned out good, with a bit of kick too.
Makes plenty easily enough for a dinner for 4 I would say, and should have some to spare for chips.
