Just finished cooking dinner. New recipe I used. I combined a couple of things I had done before together.
1st peal and cut a whole red onion (large) in half then quarter the halves. Place in an oven dish and break apart into peices. Sprinkle garlic powder, salt, and pepper. A light dusting of each over the whole dish. 1 stick of butter or margerine spread evenly and about 3 ounces of worchisire (sp) sauce. Set oven to 350 and cook until the onion has carmelized (onion gets a light brownish color), should take about 1-2 hours.
Make a pan of dirty rice. I just use zaterans box mix. Use ground sausage instead of hamburger. Set to the side.
Get the previously bought pork chops out of the fridge (you should have bought center cut boneless at 1 inch thick. Butterfly the chops (split the chops in half except the last 1/4 to 1/2 inch - if you ask the butcher will usually do this for you).
put some of the dirty rice in the middle of each chop and fold back together. Use toothpicks or cooking string (you can get from a butcher shop) to keep the chops closed.
either bake in oven or cook on grill (my preferred method) until they are done.
When the onions are carmelized remove from oven and drain.
Place each chop on a plate and open. Cover with onion and serve with Fresh corn on the cob (lots of butter).
