Edit-Also, you buy knock-offs to save money.
Yes, very acceptable. The mini fridge is a college staple. I have two. Problem is, I can't get the settings right to the point where the freezer keeps stuff frozen, but doesn't freeze the beer right below it. It is tricky.

Then, you really haven't been to a ramen restaurant.

Personally I like udon best.
No I really haven't.
The ramen restaurant in Eugene isn't really a ramen restaurant. Asian restaurants in Oregon are pretty bad. We do have really good markets though. Even on the South Coast.

Pho is Vietnamese...i think there may be different kinds but i think the traditional pho involves "cooking" thin slices of raw beef in the super-hot soup...i'm too lazy to look this up though

Too lazy to cook, too lazy to do a google search. Who does that remind me of? Oh yeah...ME!
Ramen places around here only charge $2-3 for it. Extra if you want fresh ingredients added to it.
In Korea, 7-11 stores sell ramen and they have a area set off to make it there yourself if you want to. That felt so weird, eating in at a 7-11 at 2am after drinking, lol.

Oh yeah for sure, Toshi's is a joke from what I've heard. You are right about the markets though.
There was a Korean restaurant up on Willamette and 30th that was really good but that whole shopping center was torn down and I don't think they relocated.
