Does it have to be a car? I'd recommend a Toyota Tacoma. Don't know if they make one with leather...in fact I doubt it but get one with a camper shell and throw your dirty dog in the back.
25 Plus miles/gallon: check solid reputation for durability: check leather seats: unknown/doubtful Under $7500: ehh maybe
As someone who has purchased two Honda Accords used and had great luck with them I'd recommend them. That said, you'll have to go back a few years to find one in that price range. They definitely come with leather, but in the model years you're probably targeting (2000ish), I think the auto trans only came in a V6... not too sure on that, and not too sure what that V6 gets in MPG. 25 highway shouldn't be asking too much from a small (3.0 literish) V6.
You didn't specify what size car you're looking for or tranny preference.
Yeah compact trucks with the right engine/tranny combo can get pretty good mileage. Plus, you'd be able to take care of alot of utility stuff like picking up mulch, tailgating, etc. Be warned though: buy a truck, suddenly everyone you know is going to be asking for help moving.
One dude I know asked for my help to pick up his new bed and deliver it. Went to the store, picked it up, dropped it off, and he was like 'thanks, that saved me 25 bucks!' I wanted to smack him. He doesn't live very close and between the pickup/dropoff/hanging out it was three hours of my time and easily more than $25 in gas.

It's going to have to be 3.5 or less - for a 6 or a 4 banger to get what I want. I'm a big fan of the 3.8 engine, but I already know the mpg for that rarely gets over 25.
