Yes, typically you want to wait until your offense is set. At least your starters. However, if you're only starting one IDP, I would treat it like any other position and look for best value. You want a stud if possible. Just don't sacrifice a stud on offense to get one.
Keep in mind...for the most part, values for IDP change from season to season. So, even if you don't land one of the marquee players, just watch your WW once in season, and look for any players ranked high in FP/G, and upgrade if necessary.
Also, focus on a MLB's. They're like the RB's of IDP. They rack up tackles (and assists), and get you the occasional pick, sack or pass defended.
Only one IDP??? What a tease. You should talk your league manager about making it at least three.
