Broiled bacon-wrapped sea scallops and shrimp it was incredible. Can't wait to try grilling it come spring.

I'll admit to an almost-shameful moment: I cooked them in a roasting pan with a broiling rack, so all the bacon fat could drip down (there was a lot of course). I was brush-basting the seafood with a mix of crushed/diced garlic and shallot, ground pepper, lemon juice, dill, parsley and butter. All of that mixed with the bacon fat was almost more than I could resist. In fact, that would probably make a fairly tasty dressing for the mixed greens As it was, the runoff from the seafood with the fresh squeezed lemon juice made the plated greens totally acceptable to eat instead of just leaving them as plate decor.
Yes I for sure want the recipe. We get really good seafood here and I've been itching for some shrimp. Be sure to let me know quanity and how many people you fed.
These are my bacon-wrapped jalapenos, stuffed with cream cheese. Perfect for game day, like today!
Slice the jalapenos in half and de-seed them. Leave a few seeds in for extra spiciness. Fill with cream cheese and wrap with bacon. Use toothpicks to keep it all together and bake at 350 for about 30 minutes. Broil for an additional 3-4 to get it nice and good.
