I could do this trade my Willie Parker/Big Ben/Lendale for Gore. Is it too much? I think I could deal Gore or Jacobs for some needed WR depth

Who are you going to grab at QB?

Is the decline from Big Ben worth the gain you get by adding a RB that you might not play every week? You also lose 2 capable backups in Lendale and Parker.

If you did do this I wouldn't trade Jacobs for a WR because you just got rid of most of your depth

Who you would pick up at QB like cowboys said is important information, but assuming it isn't a giant downgrade I like the deal. As far as then going on to trade one for a WR, I wouldn't. It's important to keep 1 more RB than you need so you are able to play the matchups and not be screwed when someone goes down.
