It's tough to say based upon the information given but I'll give a response based upon the following assumption:
It's a 10 team league therefore the WR depth should be good enough that Harvin is NOT a starter and is either a 3rd ro 4th WR.
Based upon that it really just comes down to Clark vs Olsen and I'll take Clark. If it is NOT a ppr league then it's probably pretty close but if it IS a ppr league then Clarke widens the gap.
Now, if you NEED Harvin to be one of your starting WR's because your other guys are kind of bad then giving up a little at TE to go from Clarke to Olsen isn't that bad of a deal. However, if Harvin isn't going to be a starter for you (either by aquiring him or before trading him away) then your team would most likely be better with Clark over Olsen as your starting TE and Harvin riding the bench. Remember, you NEVER want to weaken your starting lineup just to strenghten your bench and in the reverse, if you can trade a starter and a bench player to strenghten you starters it's almost always a good trade for you.
