I generally agree with you, but a Chaka's is just SO damn good. I've tried, but just I haven't been able to replicate it...not even close. I think Chaka might be putting meth in his sauce or something.

Do you have access to quality tomatoes scott? Or at least quality cherry tomatoes? You should make caprese salad, that would go fantastic with eggplant parmagianni. That leatuce-less salad will go well too though.
Kinda gloomy here too but I'm thinking burgers tonight...wait no, I never had grilled pizza last week. It's so on.

Yeah I pickedup the produce at the farmer's market this morning. fresh tomatoes, cucumber, red and yellow bell pepper, onion. still have black olive and feta from when I made it last week.
so what's the caprese salad, if it's not the lettuce0less salad?

caprese is just tomatoes, fresh basil, soft mozzerella, oil and vinegar.
since I'm gunna layer some tomatoe slices/basil leaves/mozza in with the eggplant, it'd be a bit redundant as the salad, so I'm gunna stick with the pepper salad
