I'm currently leaving on Knox, Williams and Gaffney but I'd love some other opinions.

I definitely like Knox. I think it's too soon to take a chance on Jones. For RB I like Charles but Foster is certainly worth a roll of the dice. Good luck!

I would go with H. Nicks, J. Knox, and A. Boldin. I know A. Boldin has a horrible match up, but he is a much better receiver than your remaining options and I think he will still manage to produce more than them.

At RB I would go with J. Charles, although I wouldn't blame you for going with A. Foster. I think J. Charles will have a great game, while Houston will be airing it out early and often, putting a potential cap on A. Foster's production for this week.
