So there is no FLEX spot in your league? If there is a FLEX spot, I say don't do it - you've got 2 solid RBs, a third for FLEX, and 2 solid WRs. If your league doesn't have a FLEX spot, I would go for it. You'll be getting a lot more points at QB, you'll have 2 solid options at RB, and plenty of WRs to choose from.

I would not make this trade. McCoy is a beast (loving him on my fantasy team) and sooner or later the eagles have to realize that he is their best player. I'm really high on McCoy and coming from a Falcons fan who absolutely hates the Eagles, I love the kid.
Your QB situation is not the best, but I feel like Grossman will net you respectable numbers for the rest of the season.
I think giving up McCoy is too much for an unproven rookie (though he looks great) and for a receiver on the Chiefs.

That's tough. You definitely need an upgrade at QB, but I feel like McCoy could net you something more at QB than Newton. If you're going to trade McCoy I'd rather it be a one-for-one to get you a top tier QB. I'd say stay put and explore other QB trades.
