I plan on keeping Eli/Cruz/Colston/Welker but the last three spots are up for grabs. I'm considering DeAngelo, Ryan Williams, and Shane Vereen because RBs and b/u QBs are extremely hard to come by. Mendy is going to miss a few games so I am planning on throwing him back.

Redman likely starts atleast the 1st 6 games, then I think he still sees a RBBC role. That easily makes him your best RB imo. Mendenhall is interesting, it would ensure you the Steelers starter all year but your RBs aren't good enough to keep a stash player, I like Vareen better than Ryan Williams because it is PPR. Hightower is technically a starter I guess but I want nothing to do with shanihanigans.
Eli Cruz Welker Colston Redman Dwill then the last spot either Hightower or Vereen. I don't like either of them TBO, but you have to pick one and you don't have better options.
You should try to make some trades to get RBs that are worth keeping. you have depth at WR use that to your advantage.

As you noticed from the draft, there is a big drop-off in WR after the 20th guy or so, so try to get some RB depth with the overload of WRs as previously suggested. Those guys had it right.
I'd keep Eli (biggest Giants fan in the world but no bias), Welker, Cruz, DWill, Redman, Colston, and Celek.
I like Bell but not sure what his place on the team is so far. He did very well towards the end of the season. Still 3rd behind Forte and Bush though.
Actually Celek over Vareen/Hightower seems spot on. I completely overlooked him since he's projected as a high-end TE2 right now.
Vareen's performance in camp has been disappointing so far and Hightower still isn't 100% and it's Shanihanigans. When it's all said and done they'll both probably prove to be worthless (Woodhead will probably cancel out Vareen). Atleast Celek will start for you and get you some PPR points.
Never trust Shanahanigans. This will be happening again this year. Watch!
This is the safest route. That's why I'd stick with Celek. I drafted him a few times with much success. I am positive there will be about 2-3 weeks where you won't see much points but then at the end of the season (like clockwork), he will come on strong. Classic Celek.

That's what Chris Cooley used to do too. The first month or so he'd be invisible and you'd get so frustrated you'd be on the verge of cutting him and then he starts reeling off big games until he finished the year ranked like 6th or something.
