I would go with Olsen. He will most likely be the number 2 receiver behind Smith. Smith will be covered by a pretty good corner (Talib) and he has had the foot infection. Newton will target the TE and no Shockey.

Looks like you have a ton of voted both ways here already...but for what its worth, Im voting Olsen. I totally agree Davis has the bigger upside, but he could also throw a dud. I dont think Olsen will get blanked...min 40 yds, possible td.
I would go Davis though. His per game numbers last season were very good, if not for his suspension he would have finished in the top 5 or so TEs. Shanny uses his TE a lot on those rollouts/boot options which he will run even more with RG3. The only reason Davis was quiet in the preseason is Washington was working their backups to see what they had if they cut Cooley (which they did). I think Davis is a safe play.
I like Olsen now that Shockey is gone, as the Panthers do seem to use their TE a fair amount, and he looks promising this year, but he had a lot of drops last year so I am not as high on him. I do own him in a league and am trying to decide between Olsen and Tamme this week myself.
Still, Davis seems like the safer bet. Washington passes the ball a lot, and they will likely be playing catch up against the Saints.

I would go with Davis, other than Garcon there is no great option for RG3, so I think Davis will be a good option. Without Vilma, the LB are the weakest part of the Saints D, so I think Davis could have a nice day.
I like Davis a lot, the skins will have to air it out to keep it close. RG3 will be utilizing Davis, Olsen might have more upside, but I still think Davis is the much better play and could just as well have the higher ceiling
