I'd start Witten for sure, simply because I think he's Romo's favorite target.
I'd drop Tamme over Olsen and here's why:
Manning also has and likes to throw the ball to Dressen, which will naturally give Tamme less targets. Olsen is Newton's #2 favorite target behind Steve Smith, and with Shockey gone from the line-up this year, Olsen's targets will increase even more.
woah woah woah.. do not drop Tamme.. especially this week i would start him especially against ATL in a dome, i think everyone has forgotten how much Manning loves his TE's and how well over his career he has played in domes..

I'd go with Tamme here, as witten is still iffy with the injury and put up disappointing numbers last week. With all those targets in Dallas I think Witten will be seeing a reduced workload for at least the next 2 weeks as they figure out the Ogletree situation and hw to incorporate him.
If I had to drop/trade I would go with Olsen, Tamme is back with former Colt team mate Manning, and I think the two will do some damage this season.

There's no reason why you should have 3 TEs on your roster. TEs don't have much of an impact during head-to-head matchups unless you have one of the top TEs (Graham, Gronk). For week 2, I'd go with Tamme. Peyton usually treats his TEs pretty well. Witten is still recovering from an injury.
