Should I roll with Eli @ CAR tonight sans Nicks
or
Vick @ AZ without Maclin?

I'd go with Manning. He has a better matchup, he's a better QB, and he has better WR's even without Nicks.

at TE, I think you have to go with Gates (assuming he plays).

at RB, I'd go with McGahee because he's a better RB and Smith might get a lot less carries with Leshoure back.
