PPR - Amendola for sure dude. Actually... screw it, I'd go Amendola for both. Rudolph is an iffy player to me compared to Amendola.

I will use BenJarvus Green-Ellis for Flex if you count RB as a flex too; otherwise start Rudolph with Tenn Def. Amendola is hurt now and have to play with Arz Def.

Arizona defense is ranked 21st for pass, but you're right Amendola I think is favoring a weak ankle.
The Law Firm goes up against Miami, but ... Miami has the #1 rush defense based on yardage through 5 weeks.
Putting a TE in flex position scares me, but Tennessee defense is not too good to say the least nor is the offense. Being a TE though, I fear more will go to Harvin or Simspson or Peterson.
