Luck is a decent option and he has a great match-up this week, but I would not put him in over Matty Ice. This is a case where the "don't sit your studs" rule applies IMO.

I would not bench Matt Ryan unless he gives some indication he is slowing down. He has been money in the bank this year.

Ryan is facing one of the tougher passing defenses he's faced all year (almost everyone but DEN is bottom tier passing defense) but he does seem too good to sit. Luck has been a matchup play, doing well against weak defenses but poorly against better ones and he does have a nice matchup this week. I'm probably with sticking with your stud here though. Ryan did fine against tough defenses last year and he has plenty of tools to work with.

I would not try to get cute, Matty Ice is the start. You should only really look at match up if its a true coin flip, or if you're QB is going against a shut down defense, which the Eagles are not.
