Question is which def to start this week (probably Cowboys) and also for the rest of the season best defense to have.

I only plan to keep one.

Cowboys schedule
vs Philly, at Cincy, vs Pittsburgh, vs Saints, at Washington

Bills schedule
vs. Jaguars, vs. Rams, vs. Seahawks, at Miami, vs. Jets

This week I would definitely go Cowboys. However, I wouldn't commit that for the rest of the year. If you can hold on to both of them, I would recommend playing each week's matchup. If you have to get rid of one and can't keep the other, I would go ahead with the Cowboys. This week though, it's a lock. Philly is awful, and I am thinking that Bills game could be a shoot out with lots of offense.
