Yeah, quench your thirst for drafting with mocks if you can, and leave drafting in your serious leagues till as late as possible. That way you won't have the problem of drafting people who end up retiring due to lucrative TV offers .

My keeper leagues draft on the weekend of the second-to-last pre-season game. That gives us time to get any last minute trades done before the season but isn't so early that we get stuck with a lot of injuries.
My local $$$ league does its draft the weekend before opening day.
But for my fun leagues (that do a slow message board -- 24 hour per pick draft) I usually do the draft a little earlier to allow time to get the draft done and all before the season starts. In one league, we started drafting in November of last year for this upcoming season. It made for some interesting developments.
No earlier than the first of August. Ever. And later than that if possible. If it weren't for the fact that the NFL moved the schedule around, and made the weekend before the start of the season Labor Day, it would probably be that weekend. However, family issues mean that we are shooting for the weekend before that in my serious league.
I'd say anytime after the June 1st cuts and signings so that the rosters are officially set. But as said the later the better only because people get cut or injured during pre-season
