No, you won't get any better playing on allpro.

One thing that you can do to help limit the gap between all madden and allpro is to adjust to sliders for the offensive line to make it a little easier on you at first. Then, once you get better, put them back to normal for allmadden and play

If you just straight up want to get sacks and don't really care about stopping them, spread your line out wide and manually control your safety to cover up the receiver you see running a route that will get open. If you're in the area with a manual defender, even if you suck at actually knocking the ball down/getting user picks, the computer will often hold onto it and you can get coverage sacks.
